Pork Sausage Seasoning
(minimum meat content 65%)

Using any standard Spices Nice pork sausage seasoning, eg. Honey Bee, 1011, Supreme Pork, Cambridge Pork.

Method:

1. Mince the lean pork and fat (5mm) and place in a mixing bowl.
2. Add the seasoning and half of the water. Mix in.
3. Add the rusk and remainder of the water.
4. Remince and fill into casings.
